The first thing I get asked when people find out that I am vegetarian is “What do you eat??” I think for a lot of people, all they can imagine is me eating lettuce all day long ( which probably explains why that’s what people serve when they find out your vegetarian). The next question is “where do you get your protein??” I can assure you I get plenty of protein. Vegetables, beans, legumes, grains, nuts, seeds and even fruit contain protein. I think we have been brainwashed to think that animal products are the only source of protein, but that’s a whole other topic for another day 🙂 I find I have more energy and feel better when I eat a plant-based diet and minimize processed foods as much as possible. I do lift weights and like to supplement with plant-based protein powder especially when I am training regularly.
First thing in the a.m. : 1 quart of water
Pre workout: 1 mug of organic coffee with about a tablespoon coconut oil
Breakfast (usually post workout) : 1/2 cup old fashion oats with 1 scoop Plantfusion protein powder and about half cup organic berries and a splash of unsweetened original almond milk.
Snack: Luna Bar
Lunch: Almond Butter on sprouted grain bread and a banana
Snack: apple and protein shake or smoothie
Dinner: Brown rice with beans and veggies
Snack/treat: 70% dark chocolate
I also drink a lot of water all day long. Non stop. I always have it first thing in the morning to help rehydrate and flush out toxins and I just keep filling my glass all day.
Please keep in mind, I am not a nutritionist nor am I telling anyone what they should or should not eat. What works for one person is not always best for the next person. This is just what works for me and has helped me to maintain a healthy weight while toning and building muscle, getting in the best shape of my life and cleaning up my diet.
